→ Orange, yellow, or green bell pepper: 1 no., diced

→ Gouda or Monterey Jack cheese: 1¼ cup, shredded and divided
→ Sharp cheddar cheese: ¾ cup, shredded
→ Whole wheat tortillas: 4 nos, medium-sized
→ Vegetable oil or butter for cooking
→ Hot sauce (optional)

For Serving 

  • Salsa 
  • Guacamole 
  • Sour cream or plain Greek yoghurt 

Instructions For Chicken Quesadilla Recipe:

STEP 1:

Stir together the chilli powder, garlic powder, and salt in a small bowl. Place the chicken in a medium-sized bowl. Sprinkle half the spice mixture, ensuring that the chicken is coated properly. Set aside.

STEP 2:

Heat oil in a large stainless steel pan over medium heat. When the oil is hot, add the chopped onion, bell peppers, and any other vegetables that you may be using. On one half of the tortillas, add about 2½ tablespoons of the Monterey Jack or Gouda cheese and around 1½ tablespoons of the cheddar cheese. Heat a pan over medium- to medium-low heat. If you want a crisp quesadilla, add a little oil or butter to the skillet. Place the quesadilla in a pan with the open edge facing outward. If you have space, add a second quesadilla in the same way. Use a spatula to lightly press down the quesadillas. Cook on the first side for about 4 minutes, until it turns golden and crisp. Flip the quesadillas and allow the other side to cook too. Repeat with the other two quesadillas.
