Ingredients

  • 500g minced mutton (FreshToHome Premium Tender Goat Mince recommended)
  • 2 large potatoes, boiled and mashed
  • 1 large onion, finely chopped
  • 2 green chillies, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon red chilli powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons garam masala powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt, to taste
  • Fresh coriander leaves, finely chopped
  • 1 egg, beaten
  • Bread crumbs, for coating
  • Oil, for frying

Instructions

1.
Prepare the Mutton Mixture – The Flavour Foundation

To start with our mutton cutlet recipe, heat a little oil in a pan and add the finely chopped onions. Sauté until they turn golden brown. Add the ginger-garlic paste and green chillies, and cook for a few minutes until the raw aroma disappears.

Add the mutton mince (mutton keema cutlet) to the pan. Cook the mince over medium heat until it is browned and cooked through. Add the red chilli powder, turmeric powder, coriander powder, cumin powder, and salt. Stir well to combine the spices with the mince. Cook for another 5-7 minutes until the mixture is dry and well-cooked. Remove from heat and let it cool slightly.

2.
Mix and Shape – Forming the Cutlets
In a large mixing bowl, combine the mashed potatoes and the cooked mutton mixture. Add the garam masala powder and fresh coriander leaves. Mix everything thoroughly until well combined. This mixture forms the base of your mutton kheema cutlets.

Take small portions of the mixture and shape them into oval or round patties. Ensure that the patties are compact and even in thickness for uniform cooking.

3.
Coating – The Crispy Layer
Beat the egg in a shallow bowl. Place the bread crumbs in another bowl. Dip each cutlet into the beaten egg, ensuring it is coated well, and then roll it in the bread crumbs. Repeat this process for all the cutlets. This step gives the cutlets their signature crispy exterior.

4.
Frying – Achieving Golden Perfection
Heat oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small piece of the cutlet mixture into the oil. If it sizzles and rises to the surface, the oil is hot enough.

Carefully place the cutlets into the hot oil, a few at a time, without overcrowding the pan. Fry until they are golden brown and crispy on both sides, about 3-4 minutes per side. Use a slotted spoon to remove the cutlets from the oil and drain them on paper towels to remove excess oil.
