Crumb fried chicken-cream cheese filled croquetes. A Brazilian speciality snack.

Coxinha means 'little chicken leg' in Portuguese and is a popular food in Brazil. Flour dough or mashed potato is stuffed with shredded chicken and cream cheese and shaped into chicken drumstick. This in then breaded and deep fried in oil to golden and served with a dipping sauce.

Cooking instruction: In a deep fry pan, heat oil enough to cover the croquettes individually or in couples. Drop the Coxinhas carefully into the hot oil with out allowing to splash on to the body. Deep fry for few minutes to form a golden crumb coating. Strain on to a kitchen towel to drain off excess oil and serve hot with any choice of dip.
